The Pork Chop That Ate Milwaukee: Why You Must Try Carson's Before a Show

Forget the pre-show popcorn—you need to fuel up for a comedy superstar like Nate Bargatze. My recent trip to Milwaukee for his show at the Fiserv Forum started with a serious stop at Carson's Restaurant, and let me tell you, this place is the real deal.

Appetizers to Kick Off the Feast

Carson's is perfectly located right near the Forum, making it the ideal spot for fine dining. But we didn’t walk in looking for fine; we walked in starving.

While it usually takes us twenty minutes of agonizing debate to choose an appetizer, we were easily seduced:

  • Al’s Pick: The classic Shrimp Dejonghe. Juicy shrimp swimming in a buttery, garlicky bath. It’s an old-school favorite for a reason—it just hits different.

  • My Pick: The Scratch-Made French Onion Soup. A deep, savory broth crowned with a thick layer of golden, bubbling cheese that's practically a meal on its own.

The Main Event: A Chop So Big, It's Criminal

We typically order wildly different entrées, but the moment we saw the picture on the menu, we were instantly united. We both ordered the Bone-In BBQ Charcrusted Pork Chop.

I was not prepared.

When the plate landed, it was less a pork chop and more a Pork Mountain. Seriously, I have never seen a chop this thick in my life. The outside was coated in a dark, smoky, perfectly charred crust, locking in all the savory, barbecue flavor.

Our sides were equally legendary:

  • Crisp, creamy Coleslaw

  • Their Famous Au Gratin Potatoes—rich, cheesy, and the definition of comfort food.

Honestly, we should have known better. Had we registered the sheer scale of the pork chop, we’d have wisely ordered just one to split. We both had to surrender, leaving at least a quarter of that glorious chop behind. It was a culinary crime, but we were simply too full. No dessert for us. It simply wasn’t possible.

We practically rolled our way to the Nate Bargatze show, still daydreaming about that unfinished, fabulous chop.

The Verdict

If you’re ever in Milwaukee (or near their Chicago or Deerfield locations), you must go to Carson’s. The food is phenomenal, but the service is truly exceptional—every need was anticipated and met with a smile.

It’s the perfect place to make a dinner reservation... just be prepared to leave with a full stomach and a full heart!
